It probably comes from living on a small island with shitty weather but I can take or leave summer beach holidays. The first sight of sun and the whole of Britain decamps to the coast - nope…

Give me a cold crisp winter day however and there’s nowhere better than a walk by the coast. And we’ve got some damn nice beaches too, all the nicer when you only have to share them with a handful of walkers and their dogs!

Trying to keep to a schedule in New Orleans is a fool’s errand.

From early afternoon, you’ll hear music exploding from all over the French Quarter and I challenge you not to just abandon your plans and follow your ears!

One of the best ways to immerse yourself in a new culture is via its food and nowhere is this more true than in Cajun Country around Louisiana’s river parishes.

Coached by the superb Spuddy Faucheux (check out his YouTube for a visual Bible of Cajun cooking!) we learnt the history, cultures and ingredients that form contemporary Cajun cuisine.

This cuisine has had many influences - African, French, Arcadian, Spanish, Native American, German for starters - and the cuisine reflects this. Every ingredient is designed to sing in the dish, tasting distinct but taking on the flavour of those around it - much like the cultures that make this area one of the most fascinating regions of the US with a history like no other.

Oh and it tastes amazing too!
